2 pounds beef chuck, cut into 1.5-inch cubes
4 medium carrots, peeled and cut into chunks

4 cups beef broth
2 tablespoons tomato paste
2 tablespoons all-purpose flour
3 cloves garlic, minced
2 bay leaves
1 teaspoon dried thyme
Fresh parsley for garnish

Instructions
Pat the beef cubes dry and season generously with salt and pepper.
Heat oil in a large Dutch oven or heavy-bottomed pot over medium-high heat and sear the beef in batches until browned on all sides; remove and set aside.
