Ingredients
4 medium skinless boneless chicken breasts
2 large carrots peeled and diced
2 stalks celery diced
1 small yellow onion finely diced
6 cups low-sodium chicken broth
1 cup dry orzo pasta
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh parsley for garnish
Instructions
Place the chicken breasts, carrots, celery, and onion into the slow cooker.
Add the chicken broth, dried oregano, salt, and black pepper.
Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender.
Remove the chicken breasts, shred with two forks, and return to the slow cooker.
Stir in the dry orzo pasta.
Cover and cook on high for an additional 15-20 minutes until the orzo is al dente.
Stir in the fresh lemon juice just before serving.
Garnish with fresh parsley and serve hot.
