Ingredients
- 4 cups Russet potatoes, peeled and diced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons Cajun seasoning
- 4 cups low-sodium vegetable broth
- 1 cup heavy cream (or coconut milk for dairy-free)
- ¼ cup green onions, chopped (for garnish)
Instructions
1. Wash and peel the potatoes. Dice them into bite-sized cubes.
2. In a large pot over medium heat, add olive oil and sauté the chopped onions until translucent (about 5 minutes).
3. Add minced garlic and cook for an additional minute.
4. Stir in the diced potatoes and Cajun seasoning, mixing well. Cook for another 2 minutes to combine flavors.
5. Pour in the vegetable broth until the potatoes are submerged. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes or until the potatoes are tender.
6. Blend the soup until smooth using an immersion blender or by transferring in batches to a blender.
7. Return to low heat and stir in heavy cream until well combined.
8. Serve hot, garnished with chopped green onions.
