Description

Slow Cooker Tortellini Soup is a warm, hearty, and comforting meal combining tender cheese tortellini, savory vegetable broth, and fresh vegetables cooked to perfection in a slow cooker.   • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 6 cups vegetable broth
  • 1 (14.5 oz) can diced tomatoes
  • 2 medium carrots, diced
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • To Garnish
  • Freshly grated parmesan cheese
  • Chopped fresh basil or parsley (optional)
  • Drizzle of good-quality olive oil (optional)

Instructions

1. Add diced tomatoes, vegetable broth, minced garlic, diced onion, diced carrots, and Italian seasoning into your slow cooker. Stir to combine.

2. Cover the slow cooker and cook on low for 6 to 7 hours or high for 3 to 4 hours until the carrots are tender and flavors have melded together.

3. About 30 minutes before serving, stir in the cheese tortellini and fresh spinach. Cover and cook until the tortellini is tender and the spinach is wilted, approximately 20 to 30 minutes.

4. Stir the soup well, taste and adjust seasoning with salt and pepper as needed. Garnish with freshly grated parmesan cheese and optionally with chopped basil or parsley and a drizzle of olive oil before serving.


Notes

Don’t overcook the tortellini: add it late in the cooking process to prevent mushiness.

Use fresh vegetables for better texture and vibrant flavor.

Slow cook on low heat for enhanced flavor and tender vegetables.
