Description

This Shoe Peg Corn Salad with mayonnaise, cucumbers, tomatoes, and onions is a refreshing summer salad for parties or for an everyday side dish.


Ingredients

  • 3 cans white shoe peg corn, 11 ounces each, well drained
  • 1 medium cucumber, peeled, seeded, and chopped
  • 14 ounce can petite diced tomatoes, well drained
  • 23 tablespoons pimentos or chopped roasted red peppers from a jar
  • 6 scallions, white and green parts both chopped
  • Dressing:
  • 2/3 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 tablespoon granulated sugar
  • Salt and pepper to taste

Instructions

1. Chop the cucumber and scallions and place them in a large serving bowl.

2. Add the drained corn, diced tomatoes, and pimentos to the bowl.

3. In a small bowl, whisk together mayonnaise, red wine vinegar, and granulated sugar to make the dressing. Season with salt and pepper to taste.

4. Drizzle the dressing over the vegetables and gently toss to combine.

5. Chill the salad thoroughly before serving.


Notes

This salad is best served cold and can be made several hours ahead. For added flavor, try using fire-roasted tomatoes or adding fresh herbs like parsley or dill.
