Description

Ingredients

1.5 lbs skinless, boneless chicken breast, cubed
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 jalapeño pepper, sliced
1 tablespoon fresh ginger, minced
3 garlic cloves, minced
3 tablespoons sweet chili sauce (ensure no alcohol)
2 tablespoons golden honey
2 tablespoons soy sauce (tamari for gluten-free)
1 tablespoon cornstarch
1 teaspoon sesame seeds (optional)
1 green onion, thinly sliced
Juice of 1 lime
Olive oil
Salt and black pepper to taste
Parchment paper for lining


Instructions

Preheat the oven to 425°F (220°C)
Line a large baking sheet with parchment paper
In a mixing bowl, toss the cubed chicken with cornstarch, salt, and black pepper to coat evenly
In a small bowl, mix together sweet chili sauce, honey, soy sauce, ginger, and garlic to create the glaze
Arrange the chicken pieces on the baking sheet in a single layer
Bake for 15 minutes
Add bell peppers and jalapeño to the baking sheet, drizzle with olive oil and a pinch of salt
Brush or spoon the glaze over the chicken and vegetables
Return to the oven and bake for another 10-12 minutes, or until the chicken is fully cooked and the vegetables are charred and tender
Top with green onions, sesame seeds, and a squeeze of lime before serving


Notes

For a gluten-free version, use tamari instead of regular soy sauce
The chicken can be marinated in the glaze for 30 minutes before baking for extra flavor
