Ingredients
2 lb boneless skinless chicken breasts, sliced into thin strips
1/4 cup olive oil
2 Tbsp fresh lime juice
1 tsp salt
1/2 tsp black pepper
1 large onion, sliced
2 bell peppers (mixed colors), sliced
4 tsp ground cumin
1 Tbsp dark chili powder
1 clove garlic, minced

Instructions
Preheat oven to 400°F (200°C)
In a bowl, mix lime juice, cumin, chili powder, salt, pepper, and minced garlic
Pour olive oil into the bowl and toss chicken, onion, and bell peppers with the marinade
Spread marinated ingredients evenly on a parchment-lined sheet pan
Roast for 20-25 minutes, tossing halfway for even browning
Transfer to a cutting board, slice into strips, and serve open-faced with warm flour tortillas if desired
