Description

These Easy Red Velvet Cake Mix Cookies only require 4 simple ingredients and are ready in less than 30 minutes. These cookies are the perfect easy Valentine’s Day treat or for any occasion!

Ingredients

Scale
  • 1 box Red Velvet Cake Mix
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 cup white chocolate chips

Instructions

1. Preheat oven to 350°F. Line two large baking sheets with parchment paper.

2. In a large mixing bowl, combine cake mix, oil, and eggs and mix until fully combined.

3. Fold in the white chocolate chips until well combined.

4. Using a medium cookie scoop, add cookie dough onto the baking sheet. Do not overcrowd as the cookies will spread.

5. Bake for 10-12 minutes or until the tops of the cookies are set.

6. Remove from the oven and allow the cookies to cool for 5-10 minutes on the baking sheet, then transfer them to a wire rack.

Notes

For best results, do not overbake—cookies will continue to firm up as they cool.

You can substitute white chocolate chips with milk or dark chocolate if desired.

Add festive sprinkles before baking for a holiday touch.

These cookies stay soft for days and freeze well for up to 2 months.
