Another one of my delicious yet easy Slow Cooker recipes is this slow-cooked Chicken Thighs by Pioneer Woman, made with chicken thighs, soy sauce, ketchup, honey, garlic, and ginger. This savory Pioneer Woman Slow Cooker Chicken Thighs recipe creates a dinner that takes about 6 hours to prepare and can serve up to 6 people.
Ingredients
- 1 tbsp extra-virgin olive oil
- 6 bone-in or boneless chicken thighs (skin on or skinless)
- Kosher salt
- Freshly ground black pepper
- 1/2 cup low-sodium soy sauce
- 1/2 cup ketchup
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tsp freshly minced ginger
- 2 tbsp Sriracha
- Juice of 1 lime
- Cooked rice, for serving
Instructions
1. Start by heating the olive oil in a large skillet over medium-high heat.
2. Season the chicken thighs evenly with kosher salt and black pepper.
3. Place them in the skillet and sear until golden brown, about 3-4 minutes per side.
4. Transfer the browned chicken to your slow cooker.
5. In a bowl, whisk together the soy sauce, ketchup, honey, minced garlic, ginger, Sriracha, and lime juice until smooth.
6. Pour the sauce over the chicken thighs in the slow cooker, coating each piece thoroughly.
7. Cover and set the slow cooker on low for 5-6 hours or on high for about 2 hours.
8. Check that the chicken is tender and cooked through (no longer pink inside).
9. Spoon the chicken and sauce over a bed of fluffy cooked rice.
10. Optionally, garnish with chopped cilantro or a squeeze of lime before serving.
Notes
You can use either bone-in or boneless thighs depending on your preference.
For a less spicy version, reduce or omit the Sriracha.
To make this recipe even easier, skip the searing step and place seasoned raw chicken directly into the slow cooker.
This dish pairs well with steamed vegetables like broccoli or green beans.
