Ingredients
- 2 lb beef chuck, cubed
- 3 carrots, sliced
- 3 potatoes, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 4 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp fresh thyme
- 2 bay leaves
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
1. Heat olive oil in a Dutch oven over medium-high heat.
2. Season and brown beef on all sides, then remove.
3. Add onions and garlic; sauté until fragrant.
4. Stir in tomato paste, Worcestershire sauce, thyme, and bay leaves.
5. Pour in broth and return beef to the pot.
6. Simmer covered for 1½–2 hours until tender.
7. Add potatoes and carrots; cook 30 more minutes until soft.
8. Remove bay leaves, adjust seasoning, and serve hot.
Notes
Add red wine for deeper flavor.
Freeze leftovers for up to 3 months.
