Description

Ingredients

  • 1 lb fresh strawberries
  • 1/4 cup granulated sugar
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 sleeve graham crackers (or 1.5 cups graham cracker crumbs)
  • 1/4 cup unsalted butter, melted
  • Two 8-ounce blocks of cream cheese, softened
  • 14-ounce can of sweetened condensed milk
  • 1 teaspoon vanilla paste or vanilla extract

Instructions

1. Remove and discard the stems from the strawberries, then cut them into bite-sized pieces. In a medium bowl, combine the strawberries with the sugar, lemon zest, and lemon juice. Stir well and let sit for 15 minutes to macerate.

2. Place graham crackers in a food processor and pulse into fine crumbs, or crush them in a plastic bag with a rolling pin. Mix crumbs with melted butter until evenly moistened.

3. In a large bowl, whip together softened cream cheese, sweetened condensed milk, and vanilla extract or paste with a hand mixer on medium-high speed until smooth.

4. Assemble the parfaits by layering cheesecake mixture, graham cracker crumbs, and macerated strawberries into serving glasses or jars. Repeat layers once more.

5. Cover and chill parfaits in the refrigerator for about 1 hour before serving.


Notes

Use fresh, ripe strawberries for the best flavor.

If you don’t have a food processor, crush graham crackers in a sealed plastic bag with a rolling pin.

These parfaits can be made ahead and chilled for several hours before serving.

Feel free to substitute other fruits like blueberries, raspberries, or peaches.
