Description

These elegant, no-bake Strawberry Cheesecake Bites are the perfect party dessert! Fresh strawberries are hollowed out, dipped in white chocolate, and filled with a rich, creamy, and tangy cheesecake filling, then topped with graham cracker crumbs.


Ingredients

  • 24 large strawberries (about 1 1/2 lbs.)
  • 1 (8-oz.) package cream cheese, softened
  • 2 tablespoons sour cream
  • 1/4 cup powdered sugar
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • 8 oz white chocolate, chopped (optional)
  • 2 whole graham crackers

Instructions

1. Wash and thoroughly dry the strawberries. Cut off the green tops. Trim a small, flat base on the bottom of each strawberry so they can stand up.

2. Using a melon baller or small paring knife, carefully hollow out the insides of the strawberries to create a cup.

3. In a medium bowl, beat the softened cream cheese, sour cream, powdered sugar, lemon juice, and vanilla with an electric mixer until smooth and fluffy, about 2-3 minutes. Transfer to a piping bag with a star tip.

4. Optional: Melt the white chocolate in the microwave at 50% power in 30-second intervals, stirring between each, until smooth. Dip the bottom half of each strawberry into the melted chocolate. Stand them on a parchment-lined baking sheet to set.

5. Pipe the cheesecake filling into each hollowed-out strawberry.

6. Refrigerate the filled strawberries for at least 1 hour, or until the filling is firm.

7. Just before serving, crush the graham crackers into a fine crumb. Sprinkle the crumbs over the top of the filled strawberries. Serve immediately.


Notes

For a smooth filling, make sure the cream cheese is fully softened before mixing.

Dry strawberries completely before hollowing or dipping in chocolate to ensure proper adhesion.

Add graham cracker crumbs just before serving to keep them crisp.

These bites are best served chilled and fresh for the best texture and flavor.
