Instructions
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
2. Add the diced carrots, celery, and sliced mushrooms to the pot. Sauté for 5–6 minutes until the vegetables begin to soften.
3. Stir in the dried thyme, basil, oregano, smoked paprika, and cayenne pepper. Cook for 1–2 minutes to bloom the spices and integrate the flavors.
4. Pour in the crushed tomatoes and the vegetable broth. Stir well to combine all ingredients. Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for about 20 minutes.
5. Add the chopped kale and chickpeas to the pot. Let the soup simmer for another 10 minutes until the greens are tender and the flavors meld together.
