Ingredients

  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup baby spinach, chopped
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup Greek yogurt
  • 2 tablespoons fresh dill, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions

1. Sauté onion in olive oil over medium heat until translucent, about 5 minutes. Add garlic and cook for an additional 30 seconds.

2. In a large bowl, mix sautéed onion and garlic with spinach, chicken, breadcrumbs, yogurt, dill, lemon juice, oregano, paprika, cumin, salt, and pepper.

3. Shape the mixture into approximately eight patties, about 1/2 inch thick.

4. Heat remaining olive oil in a skillet over medium heat. Cook patties for about 5-6 minutes on each side until golden brown and fully cooked through.

5. Drain on paper towels and serve warm with your favorite garnishes.


Notes

These patties are great for meal prep—store them in an airtight container in the fridge for up to 4 days or freeze for up to 2 months.

Serve in pita with tzatziki, over rice, or with a crisp Mediterranean salad.

To make gluten-free, substitute gluten-free breadcrumbs.
