Tender meatballs in a creamy Tuscan sauce with garlic, sun-dried tomatoes, and herbs. Comforting and rich, these dish are perfect for any occasion.
Ingredients
1 lb ground turkey
1/2 lb ground beef
1 cup breadcrumbs
1 egg
1/4 cup grated Parmesan
1 tsp dried oregano
1 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
1 cup sun-dried tomatoes (oil-packed)
2 cups heavy cream
2 cups crushed tomatoes
1 cup fresh spinach
1/2 cup roasted garlic (chopped)
1 cup vegetable broth
1/4 tsp nutmeg
1/4 cup fresh basil (chopped)
1/4 tsp salt (to taste)
1/4 tsp black pepper (to taste)
Instructions
Preheat oven to 375°F (190°C)
Combine turkey, beef, breadcrumbs, egg, 1/4 cup Parmesan, oregano, garlic powder, salt, and pepper in a bowl
Form into 1.5-inch meatballs
Heat olive oil in a skillet over medium-high
Sear meatballs until golden (about 3 minutes per side)
Arrange in a baking dish and bake for 15 minutes
Meanwhile, sauté sun-dried tomatoes and garlic in olive oil for 2 minutes
Add crushed tomatoes, heavy cream, spinach, vegetable broth, and nutmeg
Simmer sauce for 10 minutes
Deglaze pan (if alcohol used in deglazing, substitute water)
Stir in basil, salt, and pepper
Pour sauce over baked meatballs
Simmer 10 minutes or until bubbly
Notes
Use halal-certified meat
Substitute vegetable broth for chicken broth
Add gluten-free breadcrumbs for gluten-free
Sauce can be made in a blender for smoother texture
Store in airtight container for 3 days
