Description

Tortellini:

  • 1 (19 oz) bag frozen cheese tortellini

Chicken:

  • 2 tablespoons olive oil
  • pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • ½ teaspoon black pepper
  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika

Marry Me Sauce:

  • 2 tablespoons butter
  • ½ cup sun-dried tomatoes in oil, drained and thinly sliced
  • 3 teaspoons garlic, minced
  • 1 cup low-sodium chicken broth
  • 2 cups heavy cream
  • 1 teaspoon Italian seasoning
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 cup parmesan cheese, finely shredded
  • 2 cups baby spinach, chopped

For Garnish:

  • Fresh parsley (optional)
  • Additional parmesan cheese (optional)

Instructions

1. Season chicken pieces with black pepper, Italian seasoning, and paprika. Set aside.

2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 6–8 minutes until golden brown and fully cooked. Remove and set aside.

3. Reduce heat to medium-low. Melt butter in the same skillet. Sauté garlic and sun-dried tomatoes for about 30 seconds until fragrant.

4. Pour in chicken broth and heavy cream. Add Italian seasoning, black pepper, and paprika. Stir continuously until the sauce begins to bubble.

5. Slowly whisk in parmesan cheese until fully melted and the sauce is smooth and creamy.

6. Add the cooked chicken, chopped spinach, and frozen tortellini to the skillet. Stir occasionally and let simmer for 5 minutes, until the spinach is wilted and tortellini is heated through.

7. Let the dish rest for 2–3 minutes off heat to allow the sauce to thicken slightly. Garnish with fresh parsley and additional parmesan if desired. Serve warm.


Notes

Use freshly grated Parmesan for a smoother sauce—pre-shredded cheese may make the sauce grainy.

Let the sauce simmer before adding tortellini to ensure thickness and proper coating.

For added heat, stir in a pinch of red pepper flakes while cooking the sauce.

To prep ahead, cook the chicken and sauce in advance and store separately. Combine with tortellini when ready to serve.
