Ingredients
- 4 boneless, skinless chicken breasts
- 2 large sweet potatoes, peeled and cubed
- ¼ cup pure maple syrup
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the cubed sweet potatoes with 1 tablespoon of olive oil, salt, and black pepper. Spread them evenly on one side of a baking sheet.
3. In a separate bowl, combine the maple syrup, remaining olive oil, minced garlic, thyme, paprika, and salt. Mix well.
4. Place the chicken breasts in the bowl with the glaze, ensuring each piece is well-coated.
5. Move the marinated chicken to the empty side of the baking sheet with sweet potatoes. Make sure there’s space between the chicken pieces to ensure even cooking.
6. Place the baking sheet in the preheated oven and bake for 25–30 minutes. The chicken should reach an internal temperature of 165°F (74°C).
7. Halfway through the cooking time, brush the chicken with any leftover glaze to enhance flavor.
8. Once cooked, remove from the oven and let rest for 5 minutes. Chop fresh parsley for garnish.
9. Serve the maple-glazed chicken alongside the roasted sweet potatoes. Drizzle any remaining cooking juices over the top for added flavor.
Notes
For extra caramelization, broil the dish for the last 2 minutes of baking.
Swap sweet potatoes for butternut squash or carrots if preferred.
Use skin-on chicken thighs for more richness if desired.
Store leftovers in an airtight container for up to 3 days.
