Description
This melt-in-your-mouth side dish is easy to make and bursting with flavor. Roasted sweet potatoes are tossed in a buttery honey-lemon glaze, then oven-roasted to golden perfection. A quick and delicious way to elevate your weeknight dinner or holiday spread.
Ingredients
- 2 pounds sweet potatoes, peeled and chopped into bite-sized pieces
- 1 tablespoon extra virgin olive oil
- 2 tablespoons butter, melted
- Juice and zest of 1 lemon
- 1/4 cup honey
- Salt, to taste
Instructions
1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper and set aside.
2. Peel and chop sweet potatoes into bite-sized pieces. Place in a large mixing bowl and season with salt.
3. In a small saucepan, add the butter and olive oil. Simmer over medium heat until the butter has melted.
4. Add lemon juice, lemon zest, and honey to the pan. Simmer for one minute on low heat.
5. Pour the honey-lemon butter over the sweet potatoes and toss well to coat evenly.
6. Spread the sweet potatoes on the prepared baking sheet in a single layer.
7. Roast in the oven for 25–30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
8. Remove from oven and serve warm.
Notes
Roasting time may vary depending on your oven. Check for doneness and roast a few minutes longer if needed.
For extra caramelization, roast closer to 30 minutes and don’t overcrowd the baking sheet.
This recipe pairs wonderfully with chicken, pork, or as a holiday side dish.
Leftovers can be stored in the fridge for up to 3 days and reheated in the oven or air fryer for crispiness.
