Description

A refreshing and vibrant salad combining tender spinach, sweet strawberries, crumbled feta, and a tangy balsamic vinaigrette. Topped with fresh mint for a burst of flavor, this halal-friendly dish is perfect for picnics, barbecues, or a light meal.


Ingredients

6 cups fresh baby spinach
1 cup strawberries, hulled and sliced
2 tablespoons crumbled feta cheese
2 tablespoons shallots, thinly sliced
2 tablespoons fresh mint leaves
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 teaspoon honey
1 teaspoon Dijon mustard
Salt and black pepper to taste


Instructions

Wash and dry the spinach leaves thoroughly in a salad spinner
Arrange spinach in a large bowl or on a serving platter
Top with sliced strawberries, crumbled feta, and shallots
Just before serving, mix olive oil, balsamic vinegar, honey, and Dijon mustard in a small bowl
Drizzle dressing over the salad
Sprinkle fresh mint leaves and season with salt and pepper


Notes

Use halal-certified feta cheese if required
The salad is best when fresh, but can be refrigerated for up to a day with dressing stored separately
