Ingredients
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon smoked paprika (optional)
- 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried rosemary)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
1. Preheat your oven to 425°F (220°C).
2. Peel the sweet potatoes and cut them into 1-inch cubes, ensuring uniform size for even cooking.
3. In a small saucepan over low heat, melt the unsalted butter. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
4. In a large mixing bowl, combine the cubed sweet potatoes, olive oil, salt, black pepper, smoked paprika (if using), and the melted garlic butter mixture. Toss until evenly coated.
5. Line a large baking sheet with parchment paper or lightly grease it with cooking spray.
6. Pour the coated sweet potatoes onto the prepared baking sheet, spreading them out in a single layer.
7. Roast the sweet potatoes in the preheated oven for 25-30 minutes. Toss them halfway through for even browning.
8. After 25-30 minutes, check if they are fork-tender and golden-brown. If needed, roast for an additional 5-10 minutes.
9. Remove from the oven and sprinkle chopped fresh rosemary over the hot sweet potatoes.
10. Transfer to a serving dish and garnish with chopped fresh parsley. Serve warm.
