Ingredients
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 can (10.5 oz) French onion soup
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1 medium onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large skillet, heat olive oil over medium heat. Add sliced onions and sauté until caramelized, about 10 minutes.
3. In a large mixing bowl, combine diced chicken, uncooked rice, chicken broth, French onion soup, sour cream, garlic powder, onion powder, salt, and pepper.
4. Stir in the caramelized onions and mix well.
5. Transfer the mixture to a greased 9×13 inch casserole dish, spreading it evenly.
6. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
7. Remove the foil, sprinkle mozzarella cheese on top, and bake for an additional 15 minutes or until the cheese is bubbly and golden.
8. Let it cool for a few minutes before serving. Garnish with fresh parsley if desired.
Notes
For added flavor, consider using herb-seasoned rice.
You can substitute the chicken with cooked rotisserie chicken for a quicker option.
Feel free to add vegetables like peas or green beans for more nutrition.
