Description
This Easy Sweet Potato Casserole is a classic holiday side dish made with creamy mashed sweet potatoes, warm spices, and a golden layer of gooey mini marshmallows. It’s sweet, comforting, and a guaranteed crowd-pleaser at any gathering.
Ingredients
- For the sweet potato filling:
4 large sweet potatoes, peeled and cut into large pieces
1 cup light brown sugar
1/2 cup butter, melted
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
For the marshmallow layer:
10 oz mini marshmallows
Instructions
1. Peel the sweet potatoes and cut them into large chunks. Place them in a large saucepan and cover with water.
2. Bring the water to a boil and cook the sweet potatoes until they are tender and easily pierced with a fork.
3. Drain the sweet potatoes and return them to the saucepan. Mash them thoroughly with a potato masher.
4. Add the melted butter, brown sugar, vanilla extract, cinnamon, salt, and nutmeg to the mashed sweet potatoes. Mix until well combined.
5. Grease a 9×13-inch baking dish with cooking spray.
6. Spread the sweet potato filling evenly into the prepared dish.
7. Top with mini marshmallows, spreading them in a single even layer.
8. Bake at 350°F for 25–35 minutes, or until bubbly and the marshmallows are golden brown on top.
9. Keep a close eye towards the end to avoid burning the marshmallows.
10. Serve warm and enjoy!
Notes
You can prepare the sweet potato filling a day in advance. Just refrigerate it and add the marshmallows right before baking.
For added texture, sprinkle chopped pecans or walnuts on top before adding marshmallows.
To reduce sweetness, cut back slightly on the brown sugar or use unsweetened marshmallows.
This recipe is great for doubling and feeding a crowd. Just adjust baking time as needed.
