Ingredients
- 1 lb ground beef
- 3 cups diced potatoes (peeled or unpeeled)
- 1 can (15 oz) red kidney beans, drained and rinsed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 can (10.5 oz) condensed tomato soup
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp black pepper
- Salt to taste
- 1/2 cup shredded cheddar cheese (optional, for serving)
- Fresh parsley or green onions, chopped (optional, for garnish)
Instructions
1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
2. Transfer the cooked beef to the slow cooker.
3. Add diced potatoes, both types of beans, corn, diced tomatoes (with juice), tomato soup, onion, and garlic to the slow cooker.
4. Stir in chili powder, paprika, black pepper, and salt.
5. Mix everything together until well combined.
6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until potatoes are tender.
7. Stir before serving. Top with shredded cheese and chopped herbs if desired.
Notes
You can substitute ground turkey or sausage for the beef.
Add a diced bell pepper for extra flavor and color.
This casserole thickens as it cools—leftovers are great the next day!
Serve with crusty bread or over rice for a heartier meal.
