Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced
- 4 cloves garlic, minced
- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
1. In a large pot, heat the olive oil over medium heat.
2. Add the diced onion and sauté until translucent.
3. Stir in the minced garlic and cook for an additional minute.
4. Add the shredded chicken and chicken broth, bringing the mixture to a simmer.
5. Reduce the heat and stir in the heavy cream and parmesan cheese until melted and combined.
6. Season with salt and pepper to taste.

Notes
For a thicker soup, you can add a cornstarch slurry.
