Ingredients
2 ½ pounds beef chuck roast, cut into 1 ½ inch chunks
4 tablespoons olive oil
2 medium yellow onions, sliced
5 cloves garlic, minced
1/4 cup all-purpose flour
4 cups beef broth (alcohol-free)
1 pound carrots, peeled and cut into chunks
1.5 pounds Yukon gold potatoes, cut into chunks
1 teaspoon dried thyme
1 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Preheat your oven to 325°F (165°C).
Pat the beef chunks dry and season well with salt and pepper.
Heat 2 tablespoons of olive oil in a heavy Dutch oven over medium-high heat and sear the beef in batches until browned on all sides; remove and set aside.
Add the remaining oil to the pot, then sauté onions until soft and translucent.
Add the garlic and cook for 1 minute until fragrant.
Sprinkle the flour over the onions and stir for 2 minutes to cook off the raw taste.
Gradually whisk in the beef broth, scraping up the browned bits from the bottom of the pot.
Return the beef to the pot, add herbs, and bring to a simmer.
Cover the Dutch oven with a lid and transfer to the preheated oven.
After 90 minutes, carefully add the potatoes and carrots to the pot.
Cover and cook for another 60-90 minutes, or until the beef and vegetables are fork-tender.
Serve hot, garnished with fresh parsley.

This stew tastes even better the next day after the flavors have had more time to meld. Store in an airtight container in the refrigerator for up to 3 days. Ensure your beef broth is certified alcohol-free as some commercial stocks may contain trace amounts of wine.
