Description

A tropical-inspired slow cooker dish with tender chicken breasts in a sweet, tangy pineapple sauce. Perfect for busy weeknights, this no-fuss recipe delivers vibrant island flavors with minimal effort, combining succulent chicken, fresh pineapple, and savory soy-based ingredients. Ingredients

4 chicken breasts
1 can (20 oz) crushed pineapple with juice
1/4 cup soy sauce or tamari
2 tbsp rice vinegar
2 garlic cloves, minced
1 tbsp ginger, grated (optional)
1 tbsp cornstarch


Instructions

Insert chicken breasts into the slow cooker.
Reserve 1/2 cup pineapple chunks, add remaining pineapple (juice included) to the cooker.
Mix soy sauce, vinegar, garlic, and ginger in a bowl. Pour over chicken.
Cover and cook on low for 4 to 6 hours.
Combine cornstarch with 2 tbsp water and whisk into the sauce to thicken. Stir in reserved pineapple chunks before serving.


Notes

For vegetarian option, substitute chicken with cubed firm tofu. Serve with steamed rice or cauliflower rice. Store leftovers in an airtight container in the fridge for up to 4 days.
