Description
Creamy Thai Dumpling Soup is the ultimate comfort food with bold Southeast Asian flavors. A rich coconut curry broth cradles tender dumplings and vibrant greens in this one-pot, soul-warming meal. It’s easy, satisfying, and deeply aromatic.
Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups vegetable or chicken broth
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 cup frozen or fresh dumplings
- 2 cups spinach or bok choy
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, sautéing until softened (about 3–4 minutes).
2. Pour in the broth and coconut milk, stirring to combine.
3. Add the red curry paste, soy sauce, and lime juice. Stir until well mixed and simmer for about 5 minutes.
4. Carefully add the dumplings to the simmering broth. Cook according to package instructions or until they float (usually about 5–7 minutes).
5. Incorporate the spinach or bok choy, stirring until they are wilted (about 2–3 minutes).
6. Taste the soup and adjust the seasoning if necessary. Ladle it into bowls and garnish with fresh cilantro.
7. Serve with lime wedges on the side for added brightness.
Notes
Use frozen dumplings for convenience or fresh handmade ones for a more authentic touch.
Adjust curry paste to spice preference.
Add mushrooms or shredded carrots for extra texture and depth.
Leftovers reheat beautifully the next day; just store soup and dumplings separately to avoid sogginess.
