Ingredients
- 2 cups cooked turkey, shredded
- 1 cup bread crumbs
- 1/2 cup dried cranberries, chopped
- 1/4 cup onion, finely chopped
- 1/4 cup celery, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tsp dried thyme
- 1 tsp dried sage
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 egg, beaten (optional for binding)
Instructions
1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a large bowl, combine the shredded turkey, bread crumbs, cranberries, onion, celery, parsley, thyme, sage, salt, and pepper.
3. Mix gently until all ingredients are well combined, careful not to over-mix.
4. If using, add the beaten egg to bind the mixture.
5. Form the mixture into bite-sized balls and place them on the prepared baking sheet with space between each.
6. Bake for 25-30 minutes, until golden brown and crispy on the outside.
Notes
Use day-old bread for better binding.
Adjust herbs and spices to your taste.
To make it gluten-free, use certified gluten-free bread crumbs.
For a dairy-free option, ensure no dairy-based binders are used.
