Ingredients
4 cups chopped green cabbage
2 medium carrots, sliced
2 stalks celery, chopped
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
6 cups low-sodium vegetable broth
1 tsp dried thyme
1 bay leaf
Salt & pepper to taste
Juice of 1 lemon (optional)
Instructions
1. Prepare your veggies by chopping the cabbage, carrots, and celery into bite-sized pieces.
2. In a large pot over medium heat, add olive oil and sauté minced garlic until fragrant (about 30 seconds).
3. Stir in the chopped cabbage, carrots, celery, canned tomatoes, salt, pepper, thyme, and bay leaf. Pour in enough broth to cover the ingredients.
4. Bring to a boil, then reduce heat to low and let it simmer uncovered for 30-40 minutes until veggies are tender.
5. Taste and adjust seasoning; add lemon juice if desired.
6. Serve hot with crusty bread.
