Description

These Cowboy Butter Chicken Bites are juicy, golden-seared chunks of chicken tossed in a zesty, garlicky cowboy butter sauce. Bursting with lemon, herbs, Dijon mustard, and a hint of heat, this dish is perfect for parties, meal prep, or an easy weeknight dinner.

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 2 tbsp chopped fresh parsley

Instructions

1. Season the Chicken: In a bowl, toss chicken pieces with salt, pepper, paprika, and garlic powder.

2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in batches, cooking until golden brown and cooked through. Set aside.

3. Prepare Cowboy Butter: In the same skillet, melt butter. Stir in garlic, lemon juice, Dijon mustard, red pepper flakes, and parsley. Cook for 1 minute until fragrant.

4. Combine and Finish: Return cooked chicken to the skillet and toss in the cowboy butter until fully coated. Let simmer for 1 more minute.

5. Serve: Garnish with extra parsley and serve immediately.


Notes

You can use chicken thighs for extra juiciness or chicken breasts for a leaner option.

Adjust red pepper flakes to control the level of heat.
