Ingredients
- 1.5 lbs boneless skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1/2 tsp red pepper flakes (adjust to taste)
- 2 tbsp chopped fresh parsley
Instructions
1. Season the Chicken: In a bowl, toss chicken pieces with salt, pepper, paprika, and garlic powder.
2. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken in batches, cooking until golden brown and cooked through. Set aside.
3. Prepare Cowboy Butter: In the same skillet, melt butter. Stir in garlic, lemon juice, Dijon mustard, red pepper flakes, and parsley. Cook for 1 minute until fragrant.
4. Combine and Finish: Return cooked chicken to the skillet and toss in the cowboy butter until fully coated. Let simmer for 1 more minute.
5. Serve: Garnish with extra parsley and serve immediately.
Notes
You can use chicken thighs for extra juiciness or chicken breasts for a leaner option.
Adjust red pepper flakes to control the level of heat.
