Description

Chocolate Covered Strawberry Brownies are a rich and indulgent treat that combines the fudgy goodness of brownies with the sweet and tangy flavor of fresh strawberries, all topped with a luscious chocolate coating.

  • For the Brownies:
  • 1 cup (2 sticks) unsalted butter
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • For the Topping:
  • 1 pint fresh strawberries, hulled and halved
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

1. Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides.

2. In a large microwave-safe bowl, melt the butter. Add the sugar and whisk until combined. Add the eggs and vanilla extract, whisking until smooth.

3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder. Gradually mix the dry ingredients into the wet ingredients until just combined.

4. Pour the brownie batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let the brownies cool completely.

5. Once cooled, evenly arrange the halved strawberries over the top of the brownies.

6. In a microwave-safe bowl, combine chocolate chips and heavy cream. Microwave in 30-second intervals, stirring after each, until fully melted and smooth.

7. Pour the ganache over the strawberries and spread to cover the surface completely.

8. Refrigerate the brownies for at least 1 hour to set the ganache. Use the parchment overhang to lift the brownies from the pan, then slice into squares and serve.


Notes

Make sure the brownies are fully cooled before adding strawberries to avoid melting.

You can skip the strawberries if desired and simply top the brownies with ganache.

Use high-quality chocolate chips for the smoothest ganache.

Store leftovers in the refrigerator for up to 3 days.
