Ingredients
1 lb salmon fillets, skinless
2 tbsp chili powder
1 tbsp freshly squeezed lime juice
1 clove garlic, minced
1 tsp salt, divided
Black pepper to taste
1 medium ripe peach, diced
1/2 cup diced red bell pepper
1/4 cup diced red onion
1/4 cup chopped fresh cilantro
1 tbsp lime juice, additional if needed
1/2 tsp chili powder for salsa
1 tbsp sriracha mayo (optional drizzle)
Instructions
Preheat oven to 400°F (200°C) or air fryer to 375°F
Line a baking sheet with parchment paper or air fryer basket
Cut salmon into 1-inch cubes
Mix chili powder, 1/2 tsp salt, minced garlic, lime juice, and pepper
Coat salmon cubes evenly with the chili-lime mixture
Arrange in a single layer and oven roast for 12-15 minutes or air fry for 8-10 minutes until flaky
For salsa: Combine peach, bell pepper, red onion, cilantro, lime juice, chili powder, remaining 1/2 tsp salt
Serve salmon bites topped with salsa and optional sriracha mayo
