Ingredients
- 3 boneless, skinless chicken breasts (about 1.5 lbs)
- 4 cloves fresh garlic, minced
- 1 cup long-grain white rice
- 2 fresh lemons (juice and zest)
- 6 cups low-sodium vegetable broth
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh thyme, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
1. Prepare your ingredients by chopping garlic and herbs.
2. In a large pot over medium heat, add olive oil and sear the chicken breasts for about 5 minutes on each side until golden brown. Remove and let rest.
3. Sauté minced garlic in the same pot until fragrant (about 1 minute).
4. Pour in vegetable broth and bring to a boil. Add rice, reduce heat, and simmer for about 15 minutes until cooked.
5. Shred the chicken into bite-sized pieces and return it to the pot along with lemon juice and zest. Stir well.
6. Garnish with fresh herbs before serving hot.
