Description

Ingredients

2 cups shredded cabbage (1 red, 1 green)
1 cup julienned carrots
1/2 cup boiled edamame (shelled)
1/2 cup toasted cashews
1/4 cup chow mein noodles (optional)
3 tbsp toasted sesame oil
2 tbsp white vinegar
1 tbsp soy sauce (low sodium)
1 tbsp honey
1 tsp chili flakes (optional)
1/2 tsp salt
1/4 tsp black pepper


Instructions

Shred cabbage and slice carrots into matchsticks
Toast cashews in a skillet over medium heat until golden
Boil and chill edamame for 4-5 minutes
Whisk dressing ingredients in a bowl until emulsified
Combine all vegetables, cashews, and noodles in a large bowl
Pour dressing over salad, toss gently
Transfer to serving bowl and refrigerate for 15 minutes before serving
