These Brie and Cranberry Bites are an easy and elegant appetizer made with puff pastry, creamy brie, and tangy cranberry sauce. Perfect for the holidays or any gathering!
Ingredients
- 1 sheet puff pastry (from a 17.3-ounce/490g package), thawed but kept cold
- 1 (8-ounce/227g) wheel or wedge of brie, chilled
- 1/2 cup whole berry cranberry sauce
- 1 large egg
- 1 tablespoon water
- Optional: 1/4 cup chopped toasted pecans or walnuts
- Optional garnish: fresh rosemary or thyme sprigs, honey drizzle, flaky sea salt
Instructions
1. Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
2. Cut the chilled brie into 24 small cubes, about 1/2-inch each, and keep them in the fridge until ready to use.
3. Unfold the puff pastry on a lightly floured surface. Lightly roll it into a rectangle about 10×15 inches.
4. Trim the edges and cut into 24 equal squares using a sharp knife or pizza cutter.
5. Gently press each square into the cups of a 24-cup mini muffin tin.
6. Place one brie cube into each pastry cup.
7. Top each with 1/2 to 1 teaspoon cranberry sauce. Add chopped toasted nuts if using.
8. Whisk the egg and water together to make an egg wash.
9. Brush the exposed pastry edges lightly with the egg wash.
10. Bake for 15–20 minutes, until puffed and golden brown.
11. Let cool for 5–10 minutes before removing from the tin.
12. Garnish with fresh herbs, honey drizzle, or flaky salt as desired.
13. Serve warm or at room temperature.
Notes
For best results, use all-butter puff pastry for rich flavor and flaky layers.
Don’t skip the parchment paper—it prevents sticking and makes cleanup easy.
Keep the brie and pastry cold to ensure clean cuts and minimal leaking during baking.
These bites are best enjoyed the day they are made but can be reheated gently if needed.
