Description

Taco soup is a hearty, flavorful stew combining ground meat, beans, corn, and tomatoes seasoned with cumin and chili powder. Simmered until rich and slightly chunky, it’s warming and full of savory, spiced goodness.

Ingredients

Scale
  • 1 lb ground beef or turkey or any ground meat of choice
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup salsa adds flavor and moisture
  • 1 can (15 oz) diced tomatoes with juice
  • 1 can (15 oz) black beans rinsed and drained
  • 1 cup corn kernels frozen or canned
  • 2 tsp cumin ground
  • 1 tsp chili powder
  • 2 cups beef broth or vegetable broth
  • to taste salt and pepper

Instructions

1. Heat the large pot over medium heat and add the ground meat, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes, until it develops a rich aroma.

2. Add the chopped onion and minced garlic to the meat, stirring to combine. Cook until the onion is translucent and fragrant, about 3-4 minutes.

3. Pour in the salsa and diced tomatoes with their juice, stirring to blend all the flavors evenly. Let it simmer for 2 minutes to meld.

4. Add the rinsed black beans, corn kernels, cumin, and chili powder. Stir well to distribute the spices and vegetables evenly throughout the mixture.

5. Pour in the beef broth and bring the mixture to a gentle simmer. Reduce the heat to low and let it cook uncovered for about 15-20 minutes, stirring occasionally, until the soup thickens slightly and flavors deepen.

6. Taste the soup and season with salt and pepper as needed. Adjust spices to your preference for extra flavor.

7. Serve the taco soup hot, garnished with your favorite toppings like shredded cheese, sour cream, or chopped fresh herbs if desired.

Notes

*This soup is versatile—swap ground beef for ground chicken, turkey, or plant-based meat.

*Add extra veggies like bell peppers or zucchini for more nutrients.

*Top with tortilla chips, avocado slices, or jalapeños for added texture and heat.

*Leftovers store well in the fridge for 3-4 days or freeze up to 3 months.
