Description
This delicious one pot lasagna soup combines all the flavors of traditional lasagna in a comforting soup that is easy to make and tastes amazing.
Ingredients
- 1 lb ground beef
- 1 lb Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 6 cups beef broth
- 1 (28 oz) can crushed tomatoes
- 2 tbsp tomato paste
- 2 tsp Italian seasoning
- 4 cups broken lasagna noodles
- 1 cup ricotta cheese
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
Instructions
1. In a large pot, brown the ground beef and sausage over medium heat until fully cooked. Drain excess fat.
2. Add the onion and garlic to the pot, sautéing until onion is translucent.
3. Stir in the beef broth, crushed tomatoes, tomato paste, and Italian seasoning.
4. Add the broken lasagna noodles and bring to a boil. Reduce heat and simmer until noodles are cooked, about 10-12 minutes.
5. Stir in the ricotta cheese, half of the mozzarella, and half of the Parmesan until melted and creamy.
6. Top with remaining mozzarella and Parmesan before serving, garnished with fresh basil.
Notes
This soup is perfect for leftovers and can be stored in the refrigerator for up to 3 days.
You can also freeze this soup for up to 2 months for easy meals.
