Description

Tender chicken breasts roasted with sweet potatoes, tart apples, and a spiced apple cider glaze create a comforting autumn feast that’s bursting with flavor.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1 cup apple cider
  • 1⁄2 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1⁄2 teaspoon cinnamon
  • 4 small sweet potatoes, peeled and cubed
  • 1 large apple, cored and sliced
  • 1⁄2 cup pecans, chopped
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Preheat your oven to 400°F (200°C).

2. Season chicken breasts with salt and pepper.

3. In a large ovenproof skillet, heat olive oil over medium-high heat. Add chicken breasts and cook for 5-7 minutes on each side until golden brown. Remove chicken from skillet and set aside.

4. In the same skillet, reduce heat to medium and melt the butter. Add minced garlic and sauté until fragrant, about 1 minute.

5. Pour in apple cider and chicken broth, scraping up any brown bits on the bottom of the skillet.

6. Stir in Dijon mustard, dried thyme, and cinnamon. Bring the mixture to a simmer and cook for 2 minutes.

7. Add sweet potatoes and apple slices to the skillet, stirring to coat them in the sauce.

8. Nestle the chicken breasts back into the skillet among the sweet potatoes and apples.

9. Sprinkle chopped pecans over the top.

10. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and sweet potatoes are tender.

11. Remove from the oven, and let it rest for a few minutes before serving. Garnish with fresh parsley.


Notes

This dish pairs well with a crisp green salad or steamed vegetables.

Use a cast iron skillet for best results, as it can go from stovetop to oven seamlessly.

For a sweeter flavor, consider using a sweeter variety of apple like Fuji or Honeycrisp.
