This Alfredo Lasagna Soup combines the comfort of Italian lasagna with the ease of a creamy soup, perfect for cozy nights in.
Ingredients
- 2 tablespoons Olive Oil
- 1 pound Ground Italian Sausage
- 1 medium Onion, chopped
- 4 cloves Garlic, minced
- 4 cups Chicken Broth
- 1 cup Water
- 1 cup Alfredo Sauce
- 8 pieces Lasagna Noodles, broken into pieces
- 1 tablespoon Dried Basil
- 1 tablespoon Dried Oregano
- a pinch Crushed Red Pepper Flakes
- Salt, to taste
- Pepper, to taste
- 1 cup Shredded Mozzarella Cheese
- 1/2 cup Grated Parmesan Cheese
- 1 cup Ricotta Cheese
- 1 tablespoon Freshly Chopped Parsley
Instructions
1. Heat olive oil in a large pot over medium heat, add ground Italian sausage, and cook until browned, about 5 to 7 minutes.
2. Add chopped onion and sauté for 3 to 4 minutes until softened. Stir in minced garlic and cook for another minute.
3. Pour in chicken broth and water, add Alfredo sauce, and stir until combined. Bring to a gentle boil.
4. Add broken lasagna noodles, dried basil, dried oregano, and crushed red pepper flakes. Season with salt and pepper. Simmer for 8 to 10 minutes until noodles are al dente.
5. Reduce heat to low, stir in shredded mozzarella and grated Parmesan cheese until melted.
6. Dollop ricotta cheese over the soup and let warm for about 2 minutes.
7. Ladle soup into bowls, garnish with chopped parsley and extra Parmesan, and serve.
